Joghurt Gewürztorte

Zutaten für 16 Portion(en)

2 große(r) Eier
100 g Zucker weiß
1 Packung(en) Vanillinzucker
50 g Mehl
50 g Speisestärke
1 TL Backpulver
2 TL Lebkuchengewürz
1 Beutel Glühweingewürz-Teebeutel
400 g Frischkäse, fettarm
600 g Winterjoghurt (z.B. Spekulatius, Bratapfel od. Zimt)
150 g Zucker
2 Beutel Gelatine-Fix
(alternativ: 12 Blatt Gelatine, weiß)
200 g Schlagsahne
1 Packung(en) Tortenguss rot
1 Glas Sauerkirschen

Zubereitung

Für den Biskuitboden Eier, Zucker und Vanillinzucker mit dem Schneebesen mindestens 5 Minuten schaumig schlagen. Mehl, Speisestärke, Backpulver und Lebkuchengewürz mischen, sieben und vorsichtig unter die Eiermasse rühren, bis keine Klümpchen mehr im Teig sind.

Diese Biskuitmasse in eine mit Backpapier ausgelegte Springform (26cm) füllen und sofort im Backofen bei 200 Grad (Umluft 180°, Gas Stufe 4) ca. 20 Minuten backen. Abkühlen lassen, aus der Form lösen und den Boden einmal waagerecht halbieren. Einen Boden mit einem Tortenring umgeben – hier kommt später die Füllung hinein.

Für den Belag die Kirschen mit dem Saft und dem Glühweingewürz erhitzen, von der Herdplatte nehmen und mindestens 20 Minuten ziehen und abkühlen lassen – am besten über Nacht.

Für die Füllung Frischkäse, Joghurt und 150 g Zucker glattrühren und das Gelatine-Fix unterschlagen bzw. die weißen Gelatineblätter 5 Minuten in kaltem Wasser einweichen, in einem Topf erhitzen und auflösen (nicht kochen) und vorsichtig unter die Creme ziehen. Wenn die Creme beginnt fest zu werden (nach ca. 5-10 Minuten), die Schlagsahne steifschlagen und unterziehen.

Die Hälfte der Creme auf den unteren Biskuit-Boden streichen, den zweiten Boden darauf legen und mit der restlichen Creme bestreichen. Die Oberfläche glattstreichen und alles im Kühlschrank mindestens 4 Stunden, besser über Nacht fest werden lassen.

Danach den Belag zubereiten: Die Kirschen abtropfen lassen, den Saft auffangen! Die Kirschen gleichmäßig auf der Torte verteilen. 150 ml Kirschsaft mit 100 Wasser mischen. Den Tortenguss mit diesem verdünnten Saft und dem EL Zucker mischen und nach Packungsanweisung zubereiten, über den Kirschen verteilen. Die fertige Torte nun noch etwas kaltstellen, bis der Tortenguss fest geworden ist.
